Quick Tip:

 
When you are chopping vegetables for a recipe, always chop more than the recipe requires. This way, you have something left over for a future meal. Freeze them, refrigerate them, or use them in salads. It’s one of the easiest ways I find to add veggies to meals!

I often use this trick when making my rice & beans recipe.

  1. So glad I just found your site and facebook page! This is a great idea. I love cutting up extras and freezing. I use my glass containers to freeze, and it’s perfect! I usually use the leftover veggies and add them to a pasta salad :)
