Crispy Coconut Sole with Jalapeño Raspberry Sauce

I grew up on the East Coast, by the ocean, and I was also raised Catholic (No meat on Fridays during Lent!), so I am no stranger to weekly meals including fish. My husband, however, hates fish. This recipe is an attempt to mask that “fishy flavor” and serve up something everyone will enjoy. Get Your Kids to Eat Their Vegetables (It’s Simple.)

Okay, anything involving children is rarely simple, but I happened upon this little tactic that worked for us to get our suddenly-picky eater to imbibe some vegetables. It was simple for us. Maybe it will work for you. Step One: Talk about making an Awesome Crocodile Smoothie It doesn’t have to be a crocodile. Whatever your kid is into might work well (some people call green smoothies “Monster Smoothies”). My kid just happens to like crocodiles, dinosaurs, and frogs, so it worked out well that all of those things are green. You’ll see what I mean in a second. So,...

A Dish for Those Who Hate Fish

A Dish for Those Who Hate Fish

My husband will not eat fish. Meanwhile, I’ve been known to scarf down a finned-friend for breakfast. I recently threw together an easy dinner that made Hubs say, “If you could make all fish taste like this, I would actually eat it.” I think I deserve an award. In this recipe, I’ve married my East Coast roots and Southwest flavors with Old Bay and red chile sauce (You could even use my homemade enchilada sauce). I suppose the spice in each disguises “that fishy taste” that fish-haters seem to despise. I served this crispy cod with mashed sweet potatoes...

Southwest-Inspired Potato Soup

I just love soup. It satisfies so many needs: the need for warmth, the need for a filling meal, the need to use up ingredients. One of my favorite soups to make is my grandmother’s potato soup, which utilizes simple ingredients to feed a crowd. This is a riff on her belly-warming comfort soup. Pin This! Homemade Enchilada Sauce

Homemade Enchilada Sauce

I found a recipe, from one of my favorite vegan authors, Dreena Burton, for Avocado & Pinto Bean Enchiladas and thought, “That sounds damn good.” Dreena’s recipes generally center on whole-food ingredients (she doesn’t use much tofu or seitan and rarely uses fake vegan products, save for Daiya cheese), so I it surprised me to find “1 jar prepared enchilada sauce” in her recipe list. I took a look at what the offerings in my local store, saw that prepared enchilada sauces are (not shockingly) full of sodium and preservatives, but that they didn’t...

Gluten-Free Cauliflower Crust

Gluten-Free Cauliflower Crust

I thought for sure that this recipe for cauliflower pizza crust was going to be a FAIL. My “dough” didn’t spread on my baking stone very easily, the whole thing smelled burnt, and it certainly didn’t seem sturdy enough to hold toppings. I was doubly fearful about things because if this didn’t work out, we had no other ingredients in the house other than a container of plain yogurt and a can of white beans. In fact, the photo taken for this post is from my husband’s phone, because as I removed the crust from the oven, he said, “I have to take a picture...
