Caramelized Onion-Sausage Pizza

Caramelized Onion-Sausage Pizza

I’ve been obsessed with this pizza dough recipe from Annie’s Eats. It’s easy to perfect and I’ve been experimenting with different toppings ever since I found it. Our favorite is a plain pizza with fresh mozzarella cheese, but I was feeling fall-like and wanted something cozy.

Caramelized Onion-Sausage Pizza

1 batch of Annie’s Eats Perfect Homemade Pizza Crust (this makes two pizza crusts; I used it immediately to make a traditional pizza or you could freeze it)

Toppings

Caramelized Onions (see recipe below)

2 apple-chicken sausage links (like these), sliced

Raw Milk Sharp Cheddar Cheese, like this kind from Neighborly Farms, sliced; enough to cover pizza

crushed red pepper flakes (optional)


Caramelized Onions
3 T. olive oil or butter
3 or 4 yellow onions, halved & sliced
1/2 tsp salt
1 T. agave nectar (optional)

Heat the oil in a deep-sided saucepan on med-high heat. Once hot, add the onions and reduce heat to med-low. After 10 minutes, sprinkle the salt over the onions and add the agave nectar. Allow the onions to sweat for about 20 minutes, stirring occasionally. At this point, the onions should start looking less wet and will start to brown. You will need to stir them more often as they get browner, to ensure even browning. Continue to scrape the pan and stir the onions until nicely browned and caramelized.


For the pizza:

Preheat a pizza stone in your oven at 500° for at least 30 minutes.

Stretch and pat out your dough according to recipe directions. Spread the caramelized onions over the crust. Top with sliced sausage and cheese and red pepper flakes, if using. Rub crust with a little olive oil. Slide the pizza onto the pre-heated stone and bake for 10-12 minutes.

    That looks really good! I love homeade pizza. So easy, yummy, healthy, and my 2 year old will actually eat it.
