Dear Diary: once upon a time, my relationship with buying food, cooking food, and eating food went mostly like this:

I still love to cook, and of course, I love to eat, but when it comes to thinking about accommodating more than two people, on a daily basis, and spending multiple hours making grocery lists, shopping, and preparing food, well…

The monotonous task took all the enjoyment out of cooking. I’m no stranger to meal planning services, but I always bounced between different sites, never finding the perfect fit for all of my needs. Until…

eMeals is everything I need it to be:
-I can choose the type of meals: Classic, Clean Eating, Paleo, Slow-Cooker, Simple Gourmet, Low-Carb, Low-Fat, Portion Control, Natural & Organic, Gluten-Free, and Vegetarian. So, essentially, anything I want or need for any type of eater.
-I can print out my plans and my shopping list and both are easy-to-read and concise. No boggling lists or extra prep instructions. I can easily add notes or change up a recipe on the list.
-The meals are delicious, easy, fast, and healthy. (I’m loving both the Clean Eating plans and the Natural & Organic plans!) I get great results, and I’m presented with ideas I don’t have the energy to come up with on my own. The fam’s new favorite is Chicken Marsala, or “Chicken Ahm-sala,” according to B.

I have been really curious about Emeals – so glad to have seen this. Our favorite healthy meal is whole wheat or rice pasta with homemade pesto and garden fresh tomatoes. Yum! Can’t wait for summer!

Oh, but to answer the question…we like to serve spinach-based salads with lots of fruit and nuts and a homemade salad dressing. Sometimes we have chicken on top, sometimes we don’t.

Italian white bean and kale soup. My daughter started eating the items out of it when she was first eating solids, and with some crusty bread it makes a fab, even company worthy dinner (with leftovers!).

Our current healthy family fave is a quinoa and black beans dish I make. It has a sort or south west flair, and I was truly amazed that my kids AND picky husband all love it.

Our family is into making pizza at home on healthy flat breads. It is so fun, because everyone can pick the ingredients that they like and in the amount they prefer. Yummy!
