SFN Meal O’ the Week: Throw It All In Chicken

Something From Nothing Meal of the Week:

My dad always said my mom’s best meals were the ones she made when, supposedly, there was “nothing to eat in the house.” My mother is the Queen of Something From Nothing. I try to emulate her tactics using wholesome ingredients.

I blog each week about whichever meal I’ve created from “nothing.” When it’s the night before grocery day and I’ve got a bunch of leftovers, it’s time to throw something easy and quick together. I hope these meal ideas keep you from resorting to that can o’ condensed soup casserole or, even worse, fast food!

Remember: Grain+Veggie(s)+Protein=Meal!

The photos are really the meals I cooked; I just may edit them for bad lighting 😉

This week’s meal:

SFN Meal O' the Week: Throw It All In Chicken
Throw It All In Chicken
We were gone for the weekend, and haven’t gone grocery shopping in a week, so this is literally all that was left in the house. My chicken thighs were still frozen, so I cooked on high for 7 hours. You could throw in any spices you want here, or even a few chipotles in adobe+sauce to give it a major kick. Anything goes and it all goes well in the crockpot!

2 lb. organic chicken thighs, skin removed
5-6 red-skinned potatoes, quartered
1 yellow onion, roughly chopped
1 32 oz. can of diced, organic tomatoes
1/2 bag of baby carrots
2 T. Worcestershire sauce
4 T. Bragg’s Liquid Aminos, tamari, or soy sauce
oregano, thyme, salt, pepper
water to cover (about 2 cups)

Layer in a crockpot: potatoes, carrots, onions. Top with chicken. Mix sauces and spices with water. Pour water mixture over the chicken and vegetables. Cook on high for 5 hours or low for 8 hours.
