SFN Meal O’ the Week: Rice and Beans

Something From Nothing Meal of the Week:

Rice & Beans

-Leftover sweet peppers from last week’s CSA order, chopped
-1/2 an onion, diced
-2 cloves garlic, minced (I use that stuff that comes in a jar already prepared–sue me.)
-pinto beans, previously cooked
-brown rice, previously cooked
-1 can Muir Glen Fire Roast Diced Tomatoes
-2 T. cumin
-salt&pepper
-olive oil
Heat about 3 T. olive oil in a pan. Add garlic and cook for about 30 seconds. Add peppers and onions. Cook until slightly softened. Add beans and rice, stir through. Add cumin and any other spices you may like, salt and pepper. Stir in tomatoes. Allow to simmer for a while so the flavors meld. Serve.

Bam. You just made dinner.
