I just love soup. It satisfies so many needs: the need for warmth, the need for a filling meal, the need to use up ingredients. One of my favorite soups to make is my grandmother’s potato soup, which utilizes simple ingredients to feed a crowd. This is a riff on her belly-warming comfort soup.

Southwest-Inspired Potato Soup
A simple soup packed with southwest flavor!
Ingredients
- 1 med red onion diced
- 2 cloves of garlic minced
- 1 rib of celery chopped
- 1 poblano pepper diced (use more for extra spice)
- 2-3 carrots sliced
- 4 T. olive oil
- 6 red potatoes chopped
- 1 cup frozen or fresh corn kernels
- 6 c. vegetable broth
- 1 can black beans with liquid
- fresh cilantro or oregano for garnish
Instructions
- Heat olive oil in the bottom of a heavy pot.
- Add onion, garlic, celery and poblano. Cook a minute or so until garlic is fragrant.
- Add carrots. Saute until onions are soft.
- Add potatoes. Stir.
- Pour in vegetable broth and bring to a boil. Lower heat and simmer until potatoes are fork-tender, about 15-20 minutes.
- Stir in beans and corn.
- Simmer 10 more minutes or until flavors are combined.
- Garnish with cilantro or oregano.
Notes
Serve with blue corn tortilla chips, sour cream, or grated sharp cheddar, if desired.
