Method
- Heat olive oil in the bottom of a heavy pot.
- Add onion, garlic, celery and poblano. Cook a minute or so until garlic is fragrant.
- Add carrots. Saute until onions are soft.
- Add potatoes. Stir.
- Pour in vegetable broth and bring to a boil. Lower heat and simmer until potatoes are fork-tender, about 15-20 minutes.
- Stir in beans and corn.
- Simmer 10 more minutes or until flavors are combined.
- Garnish with cilantro or oregano.
Notes
Serve with blue corn tortilla chips, sour cream, or grated sharp cheddar, if desired.
