We took our son on his first trip to the zoo last weekend and had a blast. It’s amazing what taking a child out of his normal routine will do for brain development. Bear came home with a better understanding of all those animals in the books we read, learned more about riding in the car for long periods of time (he’s cool with it), and experienced a vocabulary explosion! He suddenly started saying words we didn’t think we was ready to say yet: hippo, panther, croc, and his new favorite: tiger.
Returning home, we were hungry but had little food in the house. The following dish was born out of “nothing” and inspired by Bear’s day at the zoo.
Tiger Pasta
Ingredients
- 1/2 cup uncooked bacon chopped
- 6 carrots shredded
- 1 clove garlic minced
- 1/3 c. onion chopped
- 1 lb box of pasta any type
- olive oil
- salt & pepper
- chopped parsley for garnish
Instructions
- Boil water for pasta.
- Meanwhile, heat a large skillet over med-high heat.
- Add the bacon and fry until it starts to curl. Drain off most of the grease.
- Add garlic and onions and cook until onions begin to look translucent and the bacon starts to crisp.
- Add the carrots. Cook the mixture until carrots are just tender.
- Drain pasta and spoon portions into bowls.
- Drizzle pasta with a little olive oil and top with carrot mixture.
- Add salt and pepper to taste. Garnish with parsley if desired.
Notes
Bear thoroughly enjoyed his dinner. Being the budding chef that he is, he added some mustard to the dish–not too bad! If you’d like to try it yourself, I recommend using brown or stone-ground mustard instead 🙂
