Method
- Boil water for pasta.
- Meanwhile, heat a large skillet over med-high heat.
- Add the bacon and fry until it starts to curl. Drain off most of the grease.
- Add garlic and onions and cook until onions begin to look translucent and the bacon starts to crisp.
- Add the carrots. Cook the mixture until carrots are just tender.
- Drain pasta and spoon portions into bowls.
- Drizzle pasta with a little olive oil and top with carrot mixture.
- Add salt and pepper to taste. Garnish with parsley if desired.
Notes
Great addition: Add chopped black or kalamata olives with the carrots to further enhance the "tiger" look! Vegetarian: Omit the bacon and add 1/2 cup chopped walnuts in with the carrots. Top with mint. Variation: Use a vegetable peeler to create long strips of carrots. Omit the pasta and serve as a side dish.
