Tiger Pasta

Shredded carrots and crispy bacon meet whole wheat pasta in this kid-friendly dish

Ingredients
  

  • 1/2 cup uncooked bacon chopped
  • 6 carrots shredded
  • 1 clove garlic minced
  • 1/3 c. onion chopped
  • 1 lb box of pasta any type
  • olive oil
  • salt & pepper
  • chopped parsley for garnish

Method
 

  1. Boil water for pasta.
  2. Meanwhile, heat a large skillet over med-high heat.
  3. Add the bacon and fry until it starts to curl. Drain off most of the grease.
  4. Add garlic and onions and cook until onions begin to look translucent and the bacon starts to crisp.
  5. Add the carrots. Cook the mixture until carrots are just tender.
  6. Drain pasta and spoon portions into bowls.
  7. Drizzle pasta with a little olive oil and top with carrot mixture.
  8. Add salt and pepper to taste. Garnish with parsley if desired.

Notes

Great addition: Add chopped black or kalamata olives with the carrots to further enhance the "tiger" look! Vegetarian: Omit the bacon and add 1/2 cup chopped walnuts in with the carrots. Top with mint. Variation: Use a vegetable peeler to create long strips of carrots. Omit the pasta and serve as a side dish.
