Southwest-Inspired Potato Soup

Ingredients
  

  • 1 med red onion diced
  • 2 cloves of garlic minced
  • 1 rib of celery chopped
  • 1 poblano pepper diced (use more for extra spice)
  • 2-3 carrots sliced
  • 4 T. olive oil
  • 6 red potatoes chopped
  • 1 cup frozen or fresh corn kernels
  • 6 c. vegetable broth
  • 1 can black beans with liquid
  • fresh cilantro or oregano for garnish

Instructions
 

  • Heat olive oil in the bottom of a heavy pot.
  • Add onion, garlic, celery and poblano. Cook a minute or so until garlic is fragrant.
  • Add carrots. Saute until onions are soft.
  • Add potatoes. Stir.
  • Pour in vegetable broth and bring to a boil. Lower heat and simmer until potatoes are fork-tender, about 15-20 minutes.
  • Stir in beans and corn.
  • Simmer 10 more minutes or until flavors are combined.
  • Garnish with cilantro or oregano.

Notes

Serve with blue corn tortilla chips, sour cream, or grated sharp cheddar, if desired.
