Ingredients

med red onion
diced

cloves
of garlic

rib of celery
chopped
1
poblano pepper
diced (use more for extra spice)

carrots
sliced

olive oil

red potatoes
chopped

cup
frozen or fresh corn kernels

vegetable broth
1
can black beans with liquid
fresh cilantro or oregano for garnish
Instructions
Heat olive oil in the bottom of a heavy pot.
Add onion, garlic, celery and poblano. Cook a minute or so until garlic is fragrant.
Add carrots. Saute until onions are soft.
Add potatoes. Stir.
Pour in vegetable broth and bring to a boil. Lower heat and simmer until potatoes are fork-tender, about 15-20 minutes.
Stir in beans and corn.
Simmer 10 more minutes or until flavors are combined.
Garnish with cilantro or oregano.
Notes
Serve with blue corn tortilla chips, sour cream, or grated sharp cheddar, if desired.
