Ingredients

  • 1/2 cup uncooked bacon chopped
  • 6 carrots shredded
  • 1 clove garlic minced
  • 1/3 c. onion chopped
  • 1 lb box of pasta any type
  • olive oil
  • salt & pepper
  • chopped parsley for garnish

Instructions

  • Boil water for pasta.
  • Meanwhile, heat a large skillet over med-high heat.
  • Add the bacon and fry until it starts to curl. Drain off most of the grease.
  • Add garlic and onions and cook until onions begin to look translucent and the bacon starts to crisp.
  • Add the carrots. Cook the mixture until carrots are just tender.
  • Drain pasta and spoon portions into bowls.
  • Drizzle pasta with a little olive oil and top with carrot mixture.
  • Add salt and pepper to taste. Garnish with parsley if desired.

Notes

Great addition: Add chopped black or kalamata olives with the carrots to further enhance the "tiger" look! Vegetarian: Omit the bacon and add 1/2 cup chopped walnuts in with the carrots. Top with mint. Variation: Use a vegetable peeler to create long strips of carrots. Omit the pasta and serve as a side dish.
